Love this! Before my MCAS became severe I got really into plant based cooking and had a ton of fun with cauliflower.
In fact, if you can tolerate cashews you can make a dreamy Alfredo sauce with very similar ingredients to this recipe! I would sub water for the coconut milk and add nutritional yeast and cashews which have soaked for a few hours. Creamy decadent pasta sauce awaits!
